SPAM increase - why?
Since our new site went live we have had a spike in spam. Since the site has an e-mail link to our office in several places, I'm guessing that some webcrawler scraped it.
Assuming this is true, does anyone know if changing the text of the link so it is not a formatted e-mail address will prevent this -- or will the scrape get the address behind the link?
Yes, we know that forms are another option.

The best prevention against email address harvesting is not to mention the email at all. Harvesting bots can be configured to collect an email address whether it's linked or not, and even the anti-pattern of "at" and "dot" can be collected.
Considering you already posted the email address and it's received spam – it's too late for that address, it's already been compromised.
You might want to contact your email hosting provider about this issue to see what they could do to help prevent this influx of spam. I recommend G Suite for email hosting; they have great spam protection.

Gsuite is what we use. In fact, the spam hit us during a week-long switch over when Gsuite was not in use.
