Converting old service posts to Services

A previous question (http://uuatheme.org/question/documentation-of-services-data/) asked "I need to move the history of services from my current Joomla site to WordPress. I need basic documentation of the services database. Table name? Fields?" Christopher's reply was "It uses the standard WordPress posts table and has no custom fields – so you can feel free to use pretty well any importer plugin without worry." A few more details would be helpful here. If services are just posts, why don’t they show up in Posts? What identifies them as Services? I’m asking because our existing site has hundreds of past services, with podcast links, that we want to preserve, and we'd hate to have to copy them into Services one by one. They are in the WordPress DB as posts with category=services-past. Is there some simple database way we can magically convert them into Services? A little SQL that selects all the posts with category = services-past and does – what exactly? We’d have to go through afterwards and fix the speaker(s), but that’s okay. Thanks! Love this theme, by the way. We’re really excited about switching over to it.
