No mention of Child Theme creation

I have been working with Wordpress for 3 years. I am not a professional but I am a weekend warrior at it. I do know that I have seen nothing mentioned here about the creation of a child theme. So let me explain. Or more on wordpress.org - https://codex.wordpress.org/Child_Themes
When you make changes directly to the parent theme by way of the stylesheets - the uu theme we have all downloaded, when a new version or upgrade comes out, all the changes you have made will be overwritten by the changes of the new upgraded version. POOF - your custom changes are gone.
I am having a difficult time getting the child theme to work properly with enqueuing the child theme's functions.php from the instructions from the link above. There is an extra kirki stylesheet blocking my child's stylesheet, so no chages I make in my style.css file get to override the parent style.css stylesheet.
